Ingredients

- 200 g bottle gourd, chopped

- 7–10 curry leaves
- ½ cup buttermilk
- ½ tsp clove-cinnamon powder

- 2 cups water (adjust including buttermilk)
- 1 tbsp fresh coriander, chopped
Method
- Rinse and soak sama chawal for 15–20 minutes.
- Heat ghee in a pressure cooker. Add cumin seeds, curry leaves, green chilies and ginger. Sauté for a minute.
- Add bottle gourd and potato. Mix well.
- Add clove-cinnamon powder, Table Top Sendha Namak, and sugar (if using). Stir.
- Add sama chawal, buttermilk and water.
- Close the lid and pressure cook for 4 whistles on low flame.
- Allow pressure to release naturally, then fluff gently.
- Garnish with fresh coriander and serve hot.
