Ingredients

For Aloo Ki Sabji

  • 1 tbsp Ghee
  • 1 tsp Cumin Seeds
  • 1 tsp Hing (Asafoetida)
  • 1 tbsp chopped Ginger
  • 1 tbsp chopped Green Chilli
  • 1 tbsp Rajgira Atta (Amaranth Flour)
  • 1 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Black Pepper Powder
  • 1 tsp Cumin Powder
  • 1 cup roughly chopped Tomatoes
  • 1 cup boiled, diced Potatoes
  • Water as required
  • 1 tsp Amchur Powder (Dry Mango Powder)
  • Table Top Sendha Namak, to taste
  • Fresh Coriander Leaves

For Kuttu Puri

  • 1 cup Kuttu Ka Atta (Buckwheat Flour)
  • ½ cup Rajgira Atta (Amaranth Flour)
  • 1 cup boiled & mashed Potatoes
  • Table Top Sendha Namak, to taste
  • 1 tsp Ajwain (Carom Seeds)
  • 1 tsp Red Chilli Powder
  • Water as required
  • Oil or Ghee for Frying

 

Method

For Kuttu Puri:

  1. Combine kuttu atta, rajgira atta, potatoes, ajwain, red chilli powder and Table Top Sendha Namak in a bowl.

  2. Add a little water and knead into a smooth, firm dough.

  3. Roll into small puris and deep fry until golden brown and crisp.

 

For Aloo Ki Sabji:

  1. Heat ghee, add cumin seeds and hing.

  2. Add ginger, green chilli, and rajgira atta. Sauté for 2 minutes.

  3. Mix in spices and tomatoes, cook until soft.

  4. Add water, potatoes and amchur powder.

  5. Season with Table Top Sendha Namak and simmer for a few minutes.

  6. Serve hot Kuttu Puris with spiced Aloo Sabji.
