Ingredients (Serves 2–3):
- 200g paneer (cubed, fresh or homemade)
- 2 medium tomatoes (pureed)
- 1 medium onion (finely chopped)
- 1 tbsp butter (or fresh makkhan made at home)
- 1 tbsp cold-pressed oil (like sunflower or mustard)
- 1 tsp ginger-garlic paste (or freshly crushed)
- 1 tsp red chilli powder
- ½ tsp turmeric powder
- 1 tsp garam masala
- 1 tsp coriander powder
- 2 tbsp homemade malai (or low-fat milk for a lighter version)
- ½ tsp jaggery or sugar (optional)
- Table Top sun-dried iodized salt to taste
- Water, as needed
- Handful of fresh coriander (for garnish)

Add a little water and let the mixture simmer for 3–4 minutes. For a smoother gravy, blend using a hand blender right in the kadai.
Step 5:
Add paneer cubes and sprinkle garam masala. Cook for 2 minutes, just enough to infuse flavour while keeping the protein intact.
Step 6:
Stir in homemade malai or a dash of milk for creaminess without the excess fat. Turn off the heat and let the flavours settle.
