The Taste of Italy with a Touch of Wellness!

Pesto is one of the healthiest pasta dishes out there. It’s fresh, flavourful and packed with the good stuff. Traditionally Italian, pesto uses herbs, nuts, oil and cheese to create a bold, green sauce that tastes as good as it looks. It’s also the easiest way to get more greens in your meal. Just throw in spinach, broccoli, or any veggie you have.

Ingredients (Serves 2–3):

  • 2 cups pasta (any type, or even macaroni)
    • ½ cup fresh coriander (instead of basil)
    • ¼ cup peanuts or cashews (instead of pine nuts)
    • 3 tbsp oil (olive oil or regular cooking oil)
    • 2 cloves garlic
    • 1 green chili (optional, for spice)
    • 2 tbsp grated cheese (processed or paneer, instead of parmesan)
    Tabletop Crystal Salt to taste
    • 1 tsp black pepper powder
    • ½ tsp lemon juice

Method:

Step 1:
Boil pasta in water seasoned with Tabletop Crystal Salt. Cook until just tender (al dente), then drain and set aside. Seasoning the water ensures the pasta is flavoured from within.
Step 2:
In a blender, add fresh coriander, peanuts or cashews, garlic, green chilli, oil, cheese, a pinch of Tabletop Crystal Salt and black pepper. Blend into a smooth, thick paste. Add a splash of water only if the blades struggle. Remember, keeping it thick means richer coating on the pasta!

Step 3: Heat 1 tbsp oil in a kadai and add the pesto paste. Sauté for about a minute on low heat. This gentle cooking releases the natural oils in the coriander and nuts, giving the pesto a warm, earthy aroma without losing nutrients.

Step 4:
Add the boiled pasta and toss thoroughly until coated with the sauce. Use a light hand, so the pasta stays firm. Whole wheat or multigrain pasta works great here for added fibre.

Step 5: Squeeze in lemon juice and mix again. The acidity lifts the dish, balances the oil, and keeps the green colour fresh.

Step 6:
